Summer of 2014
It's session 2 of the Windells Snowboard, Ski and Skate Camp located on Mt Hood in Oregon. Wally was the Chef at the time with a crew of about 10. With over 200 campers and 100 staff we ran out of hot sauce and it would be a couple of days before we get a another shipment of hot sauce. After a gaurlling 14 hours day in the kitchen, Wally decided to take a few laps in the famous concrete jungle. When than Camp Director Chase Burch approached Wally with the idea.
Wally here the deal said Chase: "You should make your own pepper sauce and bottle it...I will do the marketing and selling of the sauce." "What ever" replied Wally and skated off into the sunset glare.
That evening Wally watched a few YouTube video on how to make your own hot sauce. The next day Mt Hood Produce was making the delivery but "Where are the red bell peppers?" asked Wally "I thought you ordered red pepper (Fresno chili peppers)" replied Dale "I will take these back and bring you red bells" "Yes bring us red bells but you could leaves these I figure something out to do with them" Wally replied.
That afternoon Wally found the box of Fresno Chili pepper - What should I do with these - the light bulb went off - I'll make Pepper Sauce. He started with onions and garlic with a bit of EVOO, chopped the Fresno and threw in, saw a can of smoked chipotle and threw them as well add some water and white vinegar and a dash of spices. gave it a good reduction and blended and strained the sauce. Filled all the washed use hot sauce bottle and put it out for use the next day.
The next morning Chase commented how nice it was to have more hot sauce. "Did you like it?" Wally asked "Yes, did you get a different sauce - it taste much better" "Great because I made it yesterday"
That evening Chase showed Wally a mockup of a logo and company name.
Hence that's how Wallys Pepper Sauce LLC came to life.
